Fluffy and syrupy Ravani Cake, from the depths of Turkey and Minor Asia, that will excite you… What we will need: For the Ravani Cake: 125 g flour g.o.x. or soft 150 g thick semolina 250 g soft butter 200 grams of sugar 70 grams of coconut (optional, as a topper) 200 grams of cow yogurt 20 g baking powder (1 sachet) 4 large eggs separated or 5 small (at room temperature) 1 pinch of salt Two vanilla lemon zest (from 1 large lemon) juice of 2 fresh oranges For the syrup 750 grams of water 500 grams of sugar 1 lemon peel a few drops of lemon juice All ingredients must be at room temperature. In the bowl of the mixer, beat the butter with the sugar at high speed for 5-6 minutes until fluffy and creamy. Add the yolks one by one, so that the mixture absorbs them. Add the yogurt, the zest, the vanilla, the baking powder and the orange juice, continuing to beat. Preheat the oven to 170 degrees C in air. We will cook on the middle grill. Pour the ravani mixture into a 30 cm round pan which will be very well buttered. Spread the surface with the upside down spoon. Bake for about 40 minutes, until it swells well, its surface turns brown, and comes off the walls of the pan. For the syrup: Boil the ingredients for 5-6 minutes. Pour the hot dessert with hot syrup. Sprinkle with plenty of coconut all around (optional). Freeze the dessert and serve. One secret: Once we take it out of the oven, while the Ravani is still very hot, we cut it with a knife into cake pieces and we carefully pour with the hot syrup (with a spoon), so that every cake piece becomes "wet".
