Evergreen47 Posted July 29, 2012 Share Posted July 29, 2012 I'm not big on breakfasts especially during the school year, but I decided I need to eat something to keep my energy up until lunch. Also, as a vegan, I want to make sure I'm getting enough protein during the day to support my workout routine. Here is an adapted recipe from a blog I follow (No Meat Athlete). Ingredients:1 can navy beans (15 oz)1 can pumpkin puree (15 oz)1/2 c. maple syruppumpkin pie spicesalt1.5 cups steel cut oats1/2 cup crushed pecans1 c. protein powder (This is optional. I use the vanilla Vega Sport Performance protein) Drain beans and either mash by hand or run through a food processor. In large bowl, combine beans, pumpkin, syrup, and seasoning. Mix until smooth. Add oats, nuts, and protein powder and combine well. Transfer to a oiled 9x13 baking dish and bake for 15-18 minutes at 350 F. Cool and cut. These can sit on counter for up to 4 days or can be refrigerated and used for 7 days. They also freeze pretty well. Link to comment Share on other sites More sharing options...
