seacow Posted March 23, 2012 Share Posted March 23, 2012 So I was just browsing through the food and drink section and I was overcome with all these different foods and drinks I just have to have RIGHT NOW. Thought I'd list some of them and maybe give someone else a few thoughts on what to have for dinner! Willow grouse/willow ptramigan cooked with fresh herbs like rosemary. Now for those of you who've never tried adding chocolate to a savory dish, this one would be a good starting point. Dark chocolate (70%<) is delicious with game meats. It doesnt require too much, I'd recommend shaving a little on top of the dish after it's been plated. Liver! A new found love even though liver is something most finns have been eating since elementary school. I love it plain with just a pinch of salt, or with some marjoram and thyme. And on the side some tart lingonberry jam, which also goes well with almost a lot of game meats. Reindeer and mashed potatoes, again no fancy trick needed, just some salt and pepper. I'm a sucker for mashed potatoes, eating some always comforts me.. Pickled herring and different root vegetables. Maybe sweet potatoes cooked in the oven for a looong time. A steak would do too. Or a salad! Watermelon, feta cheese, shallots or red onions, strawberries and a lime vinaigrette. Aaahhh. And as for a drinks, I'd kill for an amaretto sour. I basically love anything sour. I usually mix this drink with roughly these measurements: 8cl (2.7 ounces) Amaretto Disaronno4cl (1.3 ounces) Lemon juice.I usually put equal amounts of lemon and the liquore if I'm making it for myself I feel like I could ramble on for hours but I probably should get back to actually working... The Old Crone Posted March 23, 2012 Share Posted March 23, 2012 I miss a good steak. The beef here, for some reason is just terrible. Tasteless no matter what I do to it. A delicious rare steak-with baked potato and sour cream...yuuuuummmmmm! And I would kill for my moms liver and fried onion with mash potato! CelticGypsy Posted March 23, 2012 Share Posted March 23, 2012 I agree, the Food and Drink sub-forum, is outstanding.I've been known to sprinkle a bit of cinnamon on my beef steak before grilling, or broiling. I've also marinated my beef steak, if it's a poorer cut of beef, ( think stew meat ) in a good beer, and after that, roll it in basil, and grill. My family all goes hunting for them, then they have to be soaked in salt water overnight, then the next day Grandma fries them up. OMG they're so awesome.. I still have chantarelles in the freezer, I want to make something superb with them so I've been saving them but I haven't been able to come up with anything :/ I don't think I've ever cooked with beer, although I've been salivating over some recipes requiring it. Regarding Beer : It's properties break down tissue in poor cuts of meat, and makes them very tender. I've taken stew meat, marinated it for a 24 hour period, and skewered it to grill kabobs, with peppers and onions. I love making chocolates filled with different kinds of alcohols, one of my favorites if a vodka-cranberry filling. It's fun!
