CelticGypsy Posted November 8, 2011 Share Posted November 8, 2011 2 Cups grated zucchini ( about 3 medium ) 2 Eggs 3/4 Cup of Wheat Germ 3/4 Cup grated Monterey Jack cheeze 1/3 Cup chopped mushrooms 3 Tablespoons chopped onion 1/2 teaspoon salt 1/4 teaspoon thyme, crumbled 1/4 teaspoon rosemary, crumbled 1 Tablespoon butter 4 whole wheat burger buns Mix zucchini, eggs, wheat germ, cheese, mushrooms, onion, salt, thyme, and rosemary. Form into 4 large patties to fit burger buns. Melt butter in skillet. Add burgers and cook about 4 minutes on each side over medium high heat or until golden brown and heated through. Serve in whole-wheat burger buns. Top with your favorite condiment if desired. I like these with Salsa on top.:thumbsup: Tastes great, and good for those attempting to lose a few pounds. To make a vegan version of this just replace the eggs with egg replacement powder, a flour/water paste, tofu etc (more details here). There's also plenty of vegan cheeses available (such as Redwood), use nutritional yeast for a cheesy flavour or add in some curry powder.
