CelticGypsy Posted July 7, 2011 Share Posted July 7, 2011 (edited) SPONGE CAKE 2 ounces dark chocolate1 stick ( 1/2 cup ) butter1/2 cup sugar3/4 cup mashed potatoes ( about 2 medium potatoes )1 1/2 cups self-rising flour1/2 teaspoon salt2 eggs, beaten4 tablespoons milkICING4 ounces dark chocolate4 ounces (1/2 cup) double cream or whipping cream3/4 cup powdered suagr3 tablespoons Irish cream liquorDIRECTIONSPreheat oven to 375 degrees. Grease and line two 8 inch cake pans. Melt chocolate in double boiler. ( if melting chocolte in microwave, melt in 20 second intervals. Be careful not to burn delicious chocolate. In a mixing bowl, cream together butter and sugar until light and fluffy. Mix in melted chocolate and mashed potatoes. Sift together flour and salt. Gradually beat in eggs, adding a little flour with each addition. Fold in the rest of the flower and stir in milk. Divide mixture between cake pans and back for about 24 mintues or until top is firm, but springy to the touch. Remove from oven, and after a few minutes turn onto a cooling rack. Make icing. Melt the chocolate in a double boiler or microwave. Mix together whipping cream, chocolate, sugar and Irish cream liquor. When cake is cool, add layer of icing between the cakes and then ice the top and sides of cake. You can add shaved chocolate to the top also. Why ? I think the tators in it make it very moist too. Glad you and Hubster liked it. Thanks for the secret of the flour with the baking soda too. A treasured piece of knowledge, now I have, thanks to you ! I tell ya, this cake I've made it dozens of times for events or family gatherings, the plate is empty when I come home, a hit with everybody with a deep, long lasting, forever and a day, love for chocolate. lol !
