Samantha Posted May 10, 2011 Share Posted May 10, 2011 It was a common Irish folk custom to offer a bowl of champ to the fairies at Samhain. It would be left under a hawthorn or white-thorn tree, which were also associated with the Goddess as Crone. You will need: 10 scallions chopped 1 1/2 cups of milk 3 1/2 cups hot mashed potatoes 4 tbsp melted unsalted butter pepper and salt to taste Cook the chopped scallions including the green parts in the milk. Drain and reserve the milk. Add the scallions to mashed potatoes. beat together and add enough of the hot milk to make the dish smooth and creamy. Season to taste. Put into a deep warmed dish, make a well in the center and our the hot melted butter into it. The potato is dipped into the well of butter when serving.This recipe is great, I really enjoy it! Its served in all the restaurants here too. if you put in corned beef and fried white onions, and leave out the scallions, you get Stovies - the Scottish version!
