Irish Soul Cakes for Samhaine: Crunchy 'Barm Brack'

 

Traditionally set out for the ancestors on samhaine night.

 

Ingredients:

 

 

? cup butter

? cup caster sugar

? cup sifted plain flour

3 egg yolks

2 teaspoons mixed spice

2 handfuls currants

A little milk

 

 

Cream the butter and the sugar together, and then beat in the egg yolks. Mix in the flour and the spices, and once it is thoroughly mixed add the currants. Add a small amount of milk to soften the dough, and then split the dough into 10/12 small balls. Bake on a well greased baking tray for approximately 20 minutes or until golden.

Note: These seemed a bit TOO crunchy when I made them last. Perhaps too much flour in my recipe....?
