They're a new favorite around here and they are super easy!:biggrin2: Cheescake Bites 2 - 8 oz pkgs cream cheese or neufchatel (softened/room temp)1 cup sugar2 eggs1 tsp vanilla Beat all ingredients together. Line a muffin tin (cupcake pan) with paper cupcake holders and place a vanilla wafer in each. Spoon in cheesecake filling; about 2/3 of the way up. Bake @ 350 for 20 minutes. Hubby loved it!!! I'm calling it caramel apple cheesecake. I cant eat any of it though...me and apples dont get along:pissedoff:.
