"Rustic Rub" and "Essence"

These are Emeril's blends. I got them from his website I think. They're excellent on chicken pieces and BBQ, but they are spicy and super hot for people who aren't used to spice so be warned.

 

Rustic Rub:

8 Tbsps paprika

3 Tbsps cayenne pepper

5 Tbsps black pepper (ground)

6 Tbsps garlic powder

3 Tbsps onion powder

6 Tbsps salt

2 1/2 Tbsps dried oregano

2 1/2 Tbsps dried thyme

 

Yield: 2 cups; Keeps upto 3 months in an airtight container.

 

Essence:

2 1/2 Tbsps paprika

2 Tbsps salt

2 Tbsps garlic powder

1 Tbsp black pepper

1 Tbsp onion powder

1 Tbsp cayenne pepper

1 Tbsp dried oregano

1 Tbsp dried thyme

 

Keeps upto 3 months in an airtight container.

If you're using this with chicken, for baking or grilling, just remember to make lots. The last time I used a whole chicken cut up in pieces and my hubby, Duane, told me as he was licking his fingers, that I should have put two chickens on to bake!! LOL
