Cherry Walnut Cookies

1 cup butter, softened

1 cup icing sugar

1 egg

1 tsp vanilla

2 1/4 cups flour

1/4 tsp salt

2 cups candied red cherries, cut in half

1 cup walnut halves

 

Beat butter with sugar until fluffy. Beat in egg and vanilla. Mix flour and salt together and add to sugar mixture. Stir in cherries and walnuts. Divide into thirds. Shape into 10 inch long logs. Wrap and chill until firm (at least 3 hours) - if you want to make these ahead..freeze at this stage. Wrap in wax paper and heavy duty tin foil and keep in freezer (will keep for about a month).

 

Preheat oven to 325F, setting racks on top and bottom of oven. Line rimless baking sheets with parchment paper - set aside. Cut logs into 1/8" thick rounds. Place 1" apart on papered pans.

 

Bake on top and bottom thirds of oven, rotating and switching racks 1/2 way through just until the edges of the cookies begin to colour (8-10 minutes). Let cool on pan for 5 mins, transfer to rack and let cool completely before storing in airtight containers (will keep for upto 2 weeks -put wax paper between layers, or one month frozen)

 

Makes 12 doz cookies.
