Vegan Pumpkin Muffins

1 3/4 cups flour

1/1/4 cups sugar

1 Tbsp baking powder

1/4 tsp salt

1 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp ginger

1/4 tsp allspice

1/8 tsp ground cloves


1 cup pureed pumpkin

1Tbsp soy yogurt

1/2 cup soy milk

1/2 cup vegetable oil

2Tbsp blackstrap molasses


Preheat oven to 400F. Grease muffin tin,


Mix dry ingredients. In a seperate bowl, mix wet ingredients. Combine (pour wet into dry) until just combined. Do NOT overmix..fill muffin cups 2/3 full.


Bake 15-20 mins (regular muffin tins) and 27-30 mins (jumbo muffin tins).


If you're not vegan, just substitute soy yogurt and milk for cow's.

These sound rather yummy! Can't wait to try them out. Thanks for sharing! I'm always on the search for uses for pumpkin.
