Jaime Posted December 2, 2007 Share Posted December 2, 2007 If you like banana bread, you're going to like this recipe. It's the best one I've tried yet. The bread always comes out of the oven moist (and forgotten about it I've overcooked it once!!) Ingredients:1/2 tsp cloves2 1/2 cups flour1 1/4 tsp baking powder1 1/4 tsp baking soda1 tsp salt1 tsp cinnamon1 3/4 cups sugar2 eggs, beaten1/2 cup oil3/4 cup milk1 tsp vanilla4 overripe bananas, peeled and mashed Preheat oven to 250F degrees. Mix dry ingredients. Beat eggs and sugar until smooth. Add oil slowly and beat until fluffy. Alternate adding milk and dry ingredients to the egg/sugar/oil mixture. End with dry ingredients. Mash bananas and vanilla together. Add to batter. Mix well quickly and bake at 250F for 60-70 mins, then at 350 for 10 mins. Makes two loaves. *You can also put in blueberries, chocolate chips, nuts, etc., just decrease the amount of banana used. I've used about 1 - 2 cups of blueberries (don't mash, just stir in) and 2 bananas and that was really good. Link to comment Share on other sites More sharing options...
