Homemade "Limoncello" Liqueur

Limoncello

 

Ingredients:

 

3 1/2 cups water

2 1/2 cups sugar

zest of 10 lemons

1 26 oz bottle of vodka

 

Take the zest off the lemons in big strips (avoid removing the white pith) and place in large jar. Pour the vodka in, shake and let sit for four days.

 

Make a simple syrup with the sugar & water by heating them until the sugar is dissolved in the water and thickens a little. Let cool.

 

Add cooled simple syrup to vodka lemon mixture and let sit overnight. Strain and bottle. The recipe says to let it mellow for forty days or more...3 months is a good round number for me...

 

This is made in Italy as an aperitif and is said to help with digestion.

It is the lemon that makes it good for digestion. Lemonade is good for kidney stones I think or something similar. And of course the less sugar you can get away with the better.;)But it still works even with the sugar you just have to drink about 1-2 liters of it a day.
