Blueberry Banana Muffins (Vegan)

2 cups Flour (I use all-purpose white flour)

 

2 tsp Baking Powder

 

1 tsp Baking Soda

 

1 tsp Cinnamon

 

1/4 tsp salt

 

2 Bananas, peeled and mashed or blended

 

1/2 cup Applesauce (any kind, I only ever have the cinnamon applesauce on hand)

 

1/2 cup Honey

 

1/4 cup Olive Oil

 

1/4 cup Milk (your choice of milk. For vegan, use almond milk/soy milk/etc. I always just use regular whole milk)

 

2 tsp Pure Vanilla Extract

 

1 cup Blueberries, frozen or fresh (I use frozen)

 

 

Preheat oven to 375​ degrees. Mix the dry ingredients together in one bowl. Mix the bananas, applesauce, honey, olive oil, milk, and vanilla in a separate bowl. Combine the dry ingredients with the wet ingredients and stir until you have a thick batter. Then mix in the blueberries. Fill a muffin pan with roughly 1/4 cup of the mixture for each muffin. Bake for 17-20 minutes or until the tops are golden brown.

They are really good! I take them to family things and everyone loves them. Plus, I'm a big fan of just eating the batter. There's no eggs so I don't have to worry about getting sick lol.

Oh man these sound delicious! I can't wake to make these. Blueberry muffins are the perfect thing to bite into on a good Summer day. :)
