LostInTheMatrix Posted December 30, 2015 Share Posted December 30, 2015 2 cups Flour (I use all-purpose white flour) 2 tsp Baking Powder 1 tsp Baking Soda 1 tsp Cinnamon 1/4 tsp salt 2 Bananas, peeled and mashed or blended 1/2 cup Applesauce (any kind, I only ever have the cinnamon applesauce on hand) 1/2 cup Honey 1/4 cup Olive Oil 1/4 cup Milk (your choice of milk. For vegan, use almond milk/soy milk/etc. I always just use regular whole milk) 2 tsp Pure Vanilla Extract 1 cup Blueberries, frozen or fresh (I use frozen) Preheat oven to 375 degrees. Mix the dry ingredients together in one bowl. Mix the bananas, applesauce, honey, olive oil, milk, and vanilla in a separate bowl. Combine the dry ingredients with the wet ingredients and stir until you have a thick batter. Then mix in the blueberries. Fill a muffin pan with roughly 1/4 cup of the mixture for each muffin.
