Branwen Posted July 24, 2014 Share Posted July 24, 2014 After living in the Middle East for nearly 20 years, I learned more than a little bit about cooking there. Here's my version of a blend of spices that every woman would make for herself and have on hand. Nearly everything that's cooked would have some of this mix in it, and you could always tell who cooked a dish based on the flavor profile of her Baharat. 1/2 C black peppercorns 1/4 C coriander seeds 1/4 C cinnamon bark 1/4 C whole cloves 1/4 C cumin seeds 2 t cardamom seeds 4 whole nutmegs 1/2 C ground paprika Place all of the spices into a grinder (except for the nutmegs and paprika) and grind in batches. Grate nutmegs. Mix everything with the paprika. Store in an airtight container. Link to comment Share on other sites More sharing options...
