Rosemary Wine

Inspired today from Michele regarding Rosemary, I went searching my recipes for this :  Rosemary Wine.  I made this years ago for some of my friends. I was pleased to unearth the fact that the ancient Greeks drank Rosemary water before exercise, then bathed and splashed themselves with wine. Rosemary was used as a sudorific, a substance that causes sweating. Friends of mine who battled coughs and colds had told me that my warmed Rosemary wine was a particularly soothing night time drink.

3 Cups any White Wine

3 Tablespoons lemon juice

6 Tablespoons honey or more to your taste

3 Tablespoons fresh rosemary leaves

 

Place the Rosemary leaves between 2 sheets of waxed paper and bruise them with small hammer or other heavy object to release their flavor and aroma.  Add the bruised leaves to the combined wine, lemon juice, and honey. Bring all to a boil and simmer gently for 5 minutes. Strain out the Rosemary leaves if desired. Serve wine warm or chilled. It keeps very well in a covered jar in your fridge.

 

I do believe if One doesn't own a stove .. One could easily bring this to a boil and simmer with One's hot plate or possibly a Microwave.. jus' sayin'.

lol - LOVE it CG! Thank you!!!  Does the alcohol boil out?  I'm wondering about heating the lemon, honey and rosemary, then adding that to straight wine, lol lol lol (ahhhh.. the alchie in me comes out, lol)
