Brythonwen Posted January 9, 2013 Share Posted January 9, 2013 First off, make your own cajun spice: 1 tbsp paprika2 1/2 tsp salt1 tsp each onion powder, garlic powder, cayenne3/4 tsp each white pepper, black pepper, dried thyme, oregano Mix all together Take some chicken leg and thigh quarters (with the skin), peel the skin back and season the meat with cajun mixture, replace skin and season the outside (top and bottom)- as much as you like Bake at 450 for 45 minutes - let stand for 10 minutes and enjoy! TIPS- I LOVE to add extra thyme on top of the chicken before cooking and letting the herbs (and skin) get crispy and a little blackened- OMG yum! Even if you don't eat the skin, for me, it's important to cook it with it on to flavor the meat.
